The Bloody Sea Islands

2 oz GOOD vodka
Spicy bloody mary mix
Dash of Worcestershire sauce
Dollop of horseradish
Texas Pete to taste
1 shake of fresh ground pepper
3 shakes of Sea Island Saltworks

Stir 4 times, but do not shake
1 crisp stalk of celery
3 olives

Sea Island Saltworks Classic Restaurant Steak

Lightly coat room-temperature steak with olive or canola oil.  Sprinkle 1 tsp per pound (more or less to taste) of SIS seasoning over steak.  Cook on a hot grill or stovetop skillet to medium-rare.  Remove from heat and spread steak with ½ tsp of butter.  Allow steak to rest for 5 minutes before serving.

Seasoned Vegetables

Uniformly slice vegetables to desired size.  Drizzle with olive or canola oil and sprinkle generously with SIS.  Toss until coated.  Grill to desired level of caramelization or roast in oven at 400 degrees for 20-30 minutes.

Recommended vegetables: squash, mushrooms, onions, peppers, carrots and *asparagus.
*For asparagus, reduce cooking time by 10-15 minutes.

Roasted Potatoes

Preheat oven to 450 degrees.  Cut 2 lbs of new potatoes into quarters and place in a large mixing bowl.  Add 2 Tbsp of olive or canola oil, 2 cloves of garlic (minced), 1 Tbsp of chopped rosemary (optional) and 1-2 tsp of SIS.  Toss to coat.  Place seasoned potatoes in a greased, 9x13 oven-safe container and roast uncovered for 40-45 minutes.  Toss potatoes every 15 minutes until edges brown.

Steakhouse Baked Potato

Preheat oven to 425 degrees.  Coat baking potato with olive oil and sprinkle generously with SIS.  Place on baking sheet and cook for 1 hour or until soft.  Garnish with your favorite toppings and serve.

Magic Chicken

Rinse whole chicken and pat dry.  Liberally season inside and out with SIS, pepper and paprika.  Place in refrigerator for 3 hours to allow flavors to infuse.

Preheat oven to 450 degrees and remove chicken from fridge.  Rub fresh lemon juice over chicken and coat generously with olive oil.  Place chicken on a baking rack over a roasting pan and bake uncovered for 40 minutes.

Remove chicken from oven and make slits around legs to release juices.  Add ½ cup of white wine to roasting pan and bake for 15-20 more minutes.

Allow chicken to rest for 15 minutes.  Serve topped with wine broth.

Bread Dip

Prepare 1 loaf of bread according to baker’s instructions and slice.  Pour extra virgin olive oil into shallow dish and add SIS and pepper.  Dip warm, sliced bread into mixture.

Recommended breads: ciabatta, French and sour dough.

For Italian style, add a few drops of balsamic vinegar and grated parmesan reggianno to mixture.

Sea Island Eggs on Cheese Toast

Toast bread and top with your favorite type of cheese.  Scramble or fry eggs and place atop toasted, cheesy bread.  Sprinkle with SIS and pepper to taste.

Seared Tuna

Dip 1 inch tuna steak in clarified butter and generously sprinkle with SIS on both sides.  Cook for 1 minute on each side in HOT black skillet.  Tuna will be rare.  Serve immediately.

For a spicier variation, add cayenne pepper.

Rotisserie Turkey

Rinse whole, 12 lb turkey, pat dry and place in a 9x12 drip pan.  Juice 2 lemons into pan and place lemon rinds inside turkey.  Coat turkey with olive oil and generously season (inside and out) with SIS.

Attach turkey to rotisserie bar and tie down legs and wings with kitchen twine.

Add 1 stick of butter and 2 cups of chicken broth (may substitute 1 cup of white wine for 1 cup of chicken broth) to drip pan and place under turkey.  Begin turning turkey on medium, indirect heat and baste every 15 minutes for approximately 2-2.5 hours. This recipe also works great with chicken.

SIS Tomatoes

Peel and slice fresh tomatoes to desired thickness. Drizzle lightly with Extra Virgin Olive Oil. Sprinkle with SIS.

Options: Drizzle lightly with balsamic vinegar; add julienned fresh basil; add crumbled goat cheese...or all three!
